I was glad to be reminded of this recipe this morning. After a long commute to work due to more snow, I realized that I had my lunch but nothing for the morning. Luckily I remembered that I had stashed a few of these muffins in the freezer a couple of weeks ago when I made them.
I left out the poppy seeds. I don't like the way they get stuck in my teeth. I have a great fear of walking around all day with a mouth full of poppy seeds. Oh the horror! However, the muffin is nice on its own, just a light lemon flavor. Very nice toasted with butter. Not anything to crazy, but just right for the morning. Betsy of A Cup of Sweetness has the recipe here. Now I still need to make last week's recipe...

Your muffins look marvelous! be careful out there today, the roads are kinda slick!
Can't have those little seeds in your teeth, I don't blame you for leaving them out! They look great!
Yummy! And yes, be safe getting to work! :)
I'm always nervous about seeds in my teeth, too. Glad you had something tasty for the morning commute.
great job!
I didn't do poppy seeds either, but it was because mine were rancid...blech.
Those darn poppy seeds to get stuck in your teeth don't they? Your muffins look tasty!
The poppy in my teeth aren't my favorite either. Next time I make these I'll leave them out and maybe try orange, too.
Yummylicious muffins perfect for a stressing and brain draining work. How could I concentrate with a lemon muffin's scent at my workdesk, hmmm. I hope you can.:-)
Thanks for baking with me this week. I am sure the muffins are just as good with out the poppy seeds. I wish I would have frozen some for later but they were so tasty they were gone a day later.
i think poppy seeds are cute, but i guess not when stuck in the teeth! nice to have these on hand for emergency breakfast.
These look lovely! I've never thought of leaving out the poppy seeds, but it makes perfect sense. It's all about the lemon, anyway!
We really liked these. I enjoy the crunch of the seeds, but I get the thing about the teeth.
Ahhhh the snow. I don't know about you, but I'm over it. And these sub-zero temps? They can go too :) Glad the muffins were hiding in the freezer for breakfast, they look yummy!
